Popeyes Louisiana Kitchen coming to Columbia
The chief executive officer of Arkansas-based SmitCo Eateries Inc. confirms Popeyes Louisiana Kitchen is scheduled to open in January on the Business Loop in Columbia.
SmitCo Eateries CEO Brian Smith says the restaurant will locate in the 100 block of East Business Loop 70 in Columbia, which is currently occupied by Pizza Hut. ABC 17 News confirmed with a Pizza Hut manager Tuesday that Labor Day could be the last day for that Pizza Hut location.
Smith tells ABC 17 News construction will begin on Oct. 1 and the new restaurant is scheduled to open on Jan. 4, weather permitting. SmitCo Eateries is based in Fayetteville. Smith says the company closed on a deal with Boone Central Title last week.
Smith also tells ABC 17 News Popeyes Louisiana Kitchen plans to hire about 65 employees at the Business Loop location, adding he expects it to be a high-volume restaurant.
