Popeyes Louisiana Kitchen to open Monday in Columbia
Popeyes Louisiana Kitchen is scheduled to open Monday morning on the Business Loop in Columbia, the CEO of Arkansas-based SmitCo Eateries said.
Brian Smith said the restaurant will open at 10:30 a.m. Monday. He told ABC 17 News that the restaurant has hired 88 employees, who are currently in training.
The location is in the 100 block of East Business Loop 70 in Columbia, in a location formerly occupied by Pizza Hut. Construction began in late 2015 and is complete.
SmitCo Eateries is based in Fayetteville. Smith said Popeyes Louisiana Kitchen is considering a second Columbia location, if the company can find a location in south Columbia.
